New York Strip
The New York Strip is a steakhouse classic and one of the most popular steaks on any menu. The Strip is cut from the top loin. The muscles in this area do little work, which means that the steak is extremely tender. On a typical T-bone (or Porterhouse) steak, the larger side of the steak becomes a strip steak once cut from the bone. Well marbled, full bodied and rich with beefy flavor, a New York Strip is firm and tender when it comes to texture, flavor, and fat.
